Milk and dairy products have been a significant part of the landscape at Ƶ. This week’s What’s New Wednesday features a paper hat from the Dairy Science Department (now the Department of Dairy and Food Science), used in the production of milk, cheese, ice cream and other products. In 1891, The South Dakota Dairy School was established and offered courses in dairy science. The first commercial cream was produced 1910, and that same year South Dakota scientist lead the way in pasteurization and homogenization. Over the years, the Dairy Science Department proved a leader with innovations, successful research and discoveries. Of course, one of the innovations being 1979’s now famous cookies ‘n cream flavor; it’s “dairy delicious.”
